I really do enjoy the flavor of fish. It’s really light and doesn’t take a long time to cook. Lately, I’ve been trying to expand my taste buds for the different types of fish. Now I really do enjoy snapper but it is definitely a fish that you have to be able to afford. At times you may have to substitute another fish if your budget isn’t prepared for this dish. So, if you can’t find snapper, try any of the following: Pacific Rockfish, Striped Bass, any Sea Bass [European, Black Sea, Chilean], Catfish, Walleye, Haddock or Yellowtail. Make sure you have fillets with the skin left on for this recipe.

Prep Time: 2 hours, 10 minutes
Cook Time: 15 minutes

Ingredients:

  • 1 lb skin-on snapper fillets
  • Juice of a lime
  • Juice of a lemon
  • 1 T. black pepper
  • 1 dried cayenne pepper or 1 teaspoon cayenne powder
  • 1 T. coriander seed
  • 2 T. achiote seeds (available in Latin markets)
  • 1 T. dried oregano (Mexican oregano is best here)
  • 1 1/2 t. Kosher salt
  • 1 T. paprika
  • 1 T. garlic powder
  • 2 T. canola or other vegetable oil

Preparation:

  • There are two ways to do this spice mixture: With whole seeds, which you then grind, or with powdered spices.
  • If you have whole spices, toast the coriander, the cayenne pepper, black peppercorns, achiote seeds, and oregano in a dry pan over medium-high heat until you can smell them, shaking the pan often. This should take about 2-3 minutes.
  • Skip this step is you are using powders, because toasting them is tricky — they burn easily. Incidentally, toasting makes the spices smell better in the finished dish.
  • Achiote seeds, which look like little red nuggets, are a key to this dish. But if you cannot find them, you can substitute more paprika. It will not be the same, but is an OK alteration.
  • If you are toasting and using whole spices, grind them into a powder in a spice grinder.
  • Mix all the dry ingredients together in a bowl. In a plastic container or plastic bag, add the oil and the lemon and lime juice. Put the fish fillets in the juice-filled container and move around to coat. Now sprinkle the spice mixture over the meat side of each fillet. Don’t bother to spice the skin side. Lay the fillets skin side down in the container or bag, then let this marinate in the fridge for 2-4 hours.
  • After the fish marinates, remove it and pat the skin side dry with a paper towel. Coat it with a bit more oil and lay the fillets down on a well-oiled, preheated grill. To cook this dish, you will need an “open” space on your grill with no heat – either one section of burners turned off, or a spot where there’s no charcoal underneath. This is where you lay your fish down. If you cannot do this for some reason, wait until the fire is subsiding or turn the burner to its lowest setting.
  • Grill the fish for 10-15 minutes, depending on thickness. Do not flip. If you do, the fillet will fall to pieces. That’s why you leave the skin on. Once the meat flakes near the head end of the fillet, carefully remove the fish and set it on a platter to cool for a minute or two. Serve with flavored rice, as a sandwich filling, or break it into pieces and use it for fish tacos.

I was at a business luncheon last week and I overheard a conversation about some individuals’ co-workers. The individuals were going on and on about a few people in their office that had habits that just drove them nuts. I thought about it and it seems that despite job shortages and hours cut, there are still issues that really tick people off in their offices. To be honest, I work in a small office and we try very hard to respect each others’ property and feelings. Naturally, I’ve worked in larger offices, but for almost a decade I’ve had a small business of my own and haven’t had the problems that other people do at work.

Of course, I went straight to Google to see what some of the most common complaints about co-workers were. I found some really common ones and some that you might not expect. And I have to ask, are you guilty of any of these?

Taking someone else’s food from the office refrigerator makes your co-workers really mad. In fact, an informal online survey on TheLadders.com found that 97.8% of respondents on its site rated fridge raiders as the absolute worst breakers of office etiquette. Syd, my girl with the big kitchen, had an experience like this at her workplace. The notorious “Lunch Thief” had everyone livid, and hungry. The thievery stopped when someone was let go, we’re all guessing that he’s stealing lunches at another marketing firm now. Taking co-worker’s food riles people in their workplace — almost as much as dealing with the forgotten, reeking food left to spoil. It was reported that people have been known to take up a collection to pay someone to clean out a foul fridge. That’s how bad it can become.

Co-workers with bad personal hygiene were mentioned almost as often on the online list of shame. More than 95% of the survey respondents were bothered most by unkempt, and presumably smelly, co-workers. That could mean too much perfume as well as too little deodorant on the offensive list.

It was reported that a co-worker was driven crazy by a colleague’s incessant foot-tapping throughout the day. Another co-worker was driven to distraction by people who let their cell phone ring tones play in the office.

My own hall of shame is full of people who put on their head phones, lean back in the chairs and broadcast their conversations loudly throughout the room. It just absolutely, drives me crazy. I will get Obama and just walk away until the person finishes his/her conversation.

Drinking on the job is another co-worker problem I stumbled upon. I really had to think on this one. I guess there must be lots of different workplaces out there, given that 85.7% of the survey respondents chose that to mention. Where I work, bringing alcohol on site is grounds for dismissal, so we don’t get much opportunity to study drunk co-workers (at least at work!). Kind of a scary thought to realize the dangers and damages possible when workers drink on the job. I’d call that a safety issue more than an etiquette concern.

Wastefulness with paper was also a grievance people had in the workplace. At least we’re developing a green conscience because 82% mentioned it on the online survey. It’s food for recycling thought…and an indicator that the paperless society still is a ways off.

Some other pet peeves that emerged in the survey included cooking smelly food in the office microwave (Smelly might be in the nose of the sniffer; is popcorn smelly?) and messing with a Blackberry, etc., during a meeting (How about any cell phone texting?). Here’s a big complaint in our office: Co-workers who drain the coffee pot and fail to start another.

I was looking at some of Hank Shaw’s fish recipes the other day and I stumbled across a great one for sardines. I know that most people think of the stinky fish in the aluminum container when they think of sardines. However, what people don’t realize is that sardines are absolutely amazing fish to grill and eat on a warm summer night! Sardines are also great for the memory, check out my earlier blog: Taking a Trip Down Memory Lane for other great memory enhancing tips.

If you think that you can challenge your mind to think of and try something new, give this recipe a go.

Fresh Sardines Grilled and Stuffed

Grilled, semi-boneless fresh sardines are a fantastic fish to serve in summer. This sardine recipe uses grape leaves to hold in a simple stuffing — and keep the fish from sticking to the grill. Sardines are a full-flavored fish rich in omega-3 fatty acids, but they are bony. Good news is that it’s easy to remove most of the bones with a method describe below.

Prep Time: 45 minutes
Cook Time: 12 minutes

Ingredients:

  • 8-12 fresh sardines, scaled and gutted
  • 8-12 grape or fig leaves
  • Olive oil
  • 1/2 cup breadcrumbs
  • 1/2 cup finely chopped mushrooms
  • 2 T. chopped parsley
  • 2-4 chopped garlic cloves
  • 1 T. of your favorite herb — I like to use basil in summer, sage in winter
  • 1/4 cup finely chopped onion
  • Salt and fresh ground black pepper

Preparation:

  • Make the stuffing
    • Combine 2 tablespoons of olive oil with the breadcrumbs, mushrooms, herbs, garlic, onion and salt in a food processor and buzz until combined. Do not work the mixture too long or the texture will taste odd. Just pulse it a few times so it comes together. Let this stand while you de-bone the sardines.
  • De-bone the sardines
    • Once you have scaled and gutted sardines, you need to remove most of the bones so you can eat them easily. Do this by taking your sharpest knife — a fillet knife is the best for this — and cutting along each side of the backbone behind the ribs.
    • Once you do this, slip the point of the knife (facing away from the backbone) under the ribs and free them from the meat. Do this on each side.
    • Using scissors or kitchen shears cut the backbone where it meets the tail and where it meets the head. You can remove the head if it bothers you.
    • To remove the backbone, work your thumb and forefinger alongside the backbone at the tail end to free it, and carefully lift it up as you go toward the head. Push down the meat as you go. Once you get near the end of the ribs, it will all come away with lots of bones attached. You now have a cleanly split sardine.
    • There will still be a few bones in the sardine, but they will be very thin and perfectly edible. Assemble. Paint each sardine with olive oil and fill the cavity with some of the stuffing
  • Moisten each grape leaf (fresh or the brined, canned ones from the store are each OK) with olive oil and wrap the sardine in the leaf. The oil will help them stick.
  • If you cannot find grape or fig leaves, you can omit them or use cabbage leaves that have been soaked. If you don’t use a leaf, you will need to sew the cavity shut or use a skewer to do so.
  • Grill the sardines over a hot fire for 5-6 minutes per side. Turn only once.
  • Serve with cold white wine. Try chenin blanc, pinot grigio, a Portuguese vinho verde, a Spanish Torrontes or with this dish, a Greek assyrtiko.
  • As a side dish consider a tossed salad with a nice vinaigrette.

I really wanted to share this article with you earlier, but I honestly forgot where I had filed it! I have to wonder, is forgetfulness an age thing? Are young people really as forgetful as they seem to be? I really don’t remember if I was forgetful as they are!

I really found this article quite interesting. I am sure many of us are doing some of these suggested approaches to a healthier memory. I feel that we just have to remember to double it and be consistent.

According to neuroscientists at a recent Association for the Advancement of Science meeting in Dublin, the five best steps you can take to prevent memory loss and Alzheimer’s disease are:

  1. Ensure regular intake of omega-3 fatty acids. Healthy sources include:
    1. Walnuts

    3. Freshly ground flax seeds
    4. Wild salmon
    5. Sardines

massage_handsI am here to tell you it is about the touch on my shoulder, my neck, my arms and ankles. The warm towels, soft sounds of waterfall music, the scent of lavender in a tranquil environment that send me right over the edge with my massage.

Myself personally, I like the deep tissue massage. I tell you I can feel those old toxins cowardly running away when my masseuse attacks their unwanted, unhealthy, stress related invasion of my body and well-being. I like drinking a Vitamin Water after my massage to finalize the destruction of my toxins and to bring on that wonderful sigh of healthy accomplishment!

With so little time to get anything done now-a-days, we are relying more and more on the “To-Do List.” I’ve always wondered what a “To-Do List” for a healthy lifestyle would look like. Now, I don’t mean the fad diet “To-Do List,” I don’t want 1-15 to be Eat Subway Sandwiches and Drink Nothing but Lemon Juice and Cyan Pepper. I love a good glass of wine thank you, and Subway is great, but Jared…I am done with the Turkey sub plan.

I’ve found something that I like. It is not only a physical, but mental “To-Do List” for a healthy lifestyle. What people tend to forget is that being healthy and losing weight is more than a 30 day fad. It is a lifestyle that is met with mental and physical changes all meant to uplift you.  Below, there is an idea that I found of 22 actions that add to my mental and physical healthy well being. Many of these activities are things that we are doing anyway so read on and enjoy!

After reading this article I wanted to share it with you.

  1. Eat uncooked food one day each week.
  2. Fast at least three meals a week.
  3. Do not eat fast.
  4. Do not drink things real hot or real cold.
  5. Do not drink liquids with your meals.
  6. Drink your fruit juices at least forty-five minutes before you eat and wait at least two hours after you eat before you drink fruit juices or vegetable juices.
  7. DO NOT eat starches, sugar, or sweet fruits such as raisins, dates, and figs with meats or fruits such as grapefruit, oranges, lemons, apples, pears, peaches, etc.
  8. Avoid fried foods, gravies, hot sauces, and black pepper. [This is a HARD one for me!!]
  9. Drink a lot of pure water.
  10. Do not eat late at night.
  11. Since food is sanctified by the Word of God and prayer, quote a verse of Scripture and always ask the Lord to bless the food.
  12. Young people, remember that a good complexion does not come out of a jar or a bottle, but out of your stomach. A healthy outside comes from a healthy inside.
  13. Make your own toothpaste out of salt and soda. The dentist will tell you this is safer and better for your teeth.
  14. Take a good fast walk every day, concentrating on breathing deeply. It’s better to walk early in the morning when things are fresh and you get your purest air.
  15. Wear the most comfortable shoes if you want healthy feet.
  16. Do not wear clothes that interfere with the circulation.
  17. Do not be afraid of sunshine. There is healing in it.
  18. Sleep on a hard bed and learn to sleep on your back. Your framework is in your back, but if you sleep on your stomach or side, you are likely to impair the organs of your body and many times develop cricks in your neck and in your arms. I would rather sleep three hours on a hard bed than four on a soft bed.
  19. Do not sleep in a room with the gas turned on because it will burn out the oxygen. Keep plenty of fresh air in the room.
  20. Try to be asleep by ten o’clock and not later than eleven. One hour before midnight is worth two after midnight.
  21. Do not be deceived either by the advertisements or by the great intellects. Good food and good health habits really work. Find out what your body needs and faithfully provide it.
  22. Don’t compare money or time with health. Health is priceless.

I read this article called “Use It Or Lose It” that got  me thinking about how important sex is in someone’s life as a mature adult. After reading about the numbers of sexually active seniors it definitely made me feel good!!

Being a baby boomer has its quirks. Life experiences has shown that:

  • Not knowing the latest dance does not make me a dork
  • I can look good in my jeans without someone’s name on my butt
  • All recording artists are not Miracles, Tempting Temptations or Marvelettes
  • It is not the end of the world that my Honey and I put on extra pounds that neither one of us need.

What maturity and experience has taught gives a real appreciation for loving and caring. Real compassion offers love of the mind and spirit first and then physical.

Reaching this point in life’s experience really make you appreciate everything.  It proves again that age is just a number and this creation to man and woman is such a beautiful and precious gift that I will be able to continue to enjoy as I would a priceless aged wine!
